Green Bean Salad

I am so excited to share this green bean salad recipe with you all! The first time I came back was in the summer and I had a nice bag of green beans in the fridge that day. They were long and thin and sweet and lively, and I knew I had to find a special way to use them.

Every year, I enjoy green beans throughout the summer and fall. But no matter what season it is or what I’m cooking, they always remind me of Thanksgiving and my family’s classic green bean casserole. So when I was thinking about how to use my raw green beans, I started thinking about the holidays. Can I make an easy, fresh green bean casserole substitute? I want it to be simple but still exciting and delicious.

I made this green bean salad recipe for the first time that day and have loved it ever since. It has one of my all-time favorite ingredient combinations: green beans + tarragon + Dijon mustard. Peppery mustard tempers the sweetness of the beans, while aromatic tarragon adds a surprising and complex licorice flavor. They make this easy salad totally irresistible. Green Bean Salad Recipe Ingredients

I told you this green bean salad recipe was easy, right? It contains only 8 ingredients:

Of course green beans! If you can, use a mix of green and wax beans in this salad. The color blending in the final dish is very beautiful.
Radicchio – Its bitterness adds complexity to this simple salad. I love purple pops too!
Red onion – full of flavor. Slice it thinly, soften it and mix with the other ingredients.
Goat Cheese – The creamy texture here is fantastic, but if you’re vegan you can skip it.
Roasted Nuts – Walnuts and almonds add a delicious crunch and nutty flavor.
Tarragon – one of my favorite fresh herbs! It’s especially delicious with fresh green beans and mustard.
Honey Mustard Dressing – This sweet and tangy homemade dressing ties the entire salad together.
And flaky sea salt – makes all the flavors pop!
Blanch the green beans until they are crisp, tender and bright green. Dip them into a large bowl of ice water to stop the cooking process. Then, drain and blot them dry.

Place green beans in a bowl and toss with endive, onion, and a few spoonfuls of dressing. Place the mixture on a plate or bowl and top with a small dollop of goat cheese, nuts, and tarragon. Drizzle with more dressing, season with flaky sea salt and enjoy!
